Eat more mushrooms can supplement vitamin D

Sunlight is the “catalyst” of vitamin D, and its ultraviolet rays can promote the skin to synthesize vitamin D. Mushrooms can also synthesize vitamin D, but in different ways, they are exposed to ultraviolet light. Scientists believe that, to a considerable extent, mushrooms may soon become an important source of vitamin D that sustains strong bones and resists disease. A recent study, which is still in its infancy, shows that short-term exposure to UV light can even cause the growing mushroom to produce large amounts of vitamin D. The study was proposed by the U.S. Food and Drug Administration and funded by the U.S. Mushroom Directorate.

A planter predicted that if further research is conducted, this experimental project may completely change the reasons for consumers to buy mushrooms. People currently buy mushrooms because of their low fat and calorie content. Joe Caldwell, vice president of Monterrey, the largest producer of fresh mushrooms in the United States, said that people eat mushrooms because they do not contain certain substances, not because they contain certain substances.

Scientists and planters said that hopefully this means that this agricultural product will become a unique plant source of vitamin D because it is easy to expose the growing or freshly picked mushrooms to ultraviolet light. For people who do not eat fish or drink milk, this is tantamount to a gift. Fish and milk are currently the main source of vitamin D.

To date, this ongoing study has shown that after a mushroom has been exposed to ultraviolet light for about 5 minutes after picking, the resulting vitamin D is more than 8 times the amount of vitamin D required per person per day. According to the National Institutes of Health, if confirmed, this would be higher than the vitamin D content of two tablespoons of cod liver oil.
