Asparagus canned products are made using high-quality raw materials such as fresh asparagus, sugar, monosodium glutamate (MSG), salt, and water. The production process involves a variety of equipment, including baskets, cooking pots, sinks, sterilized cans, and cooling tanks. The following is a detailed description of the method used:
First, a brine solution is prepared by mixing 2% to 25% saltwater, 0.75% to 0.95% white granulated sugar solution, and 0.14% to 0.19% MSG solution. These three components are combined to create a flavorful broth. The pH of the soup is then adjusted to between 5.4 and 5.6, with vitamin C added to preserve color and freshness. The soup is heated to approximately 90°C before proceeding to the next step.
Fresh asparagus is carefully selected and washed under running water. The asparagus is placed in a special basket with the tips pointing upward, ensuring that about two-thirds of the stalks are submerged in hot water at 93±2°C. This helps prevent the tips from overheating. The tips are partially exposed to the surface for 2-3 minutes, followed by a 1-minute immersion. The water hardness must not exceed 17°dH to maintain quality. After this pre-cooking step, the asparagus is quickly rinsed with cold water for about one minute and then transferred to a cooling tank.
The asparagus should sink slowly during cooling, indicating proper pre-cooking. If it sinks too quickly, it may be overcooked, while if it floats, it suggests undercooking. Once cooled, the outer discolored layers are peeled off, and the asparagus is arranged with the tips facing up inside sterilized cans. A portion of the prepared soup is then poured into each can, ensuring the tips are fully covered.
After filling, the cans are heated to 90–95°C and allowed to exhaust for 10–12 minutes before being sealed quickly. Following sealing, the cans undergo sterilization. For 250g cans, sterilization is done at 115–116°C for 23 minutes. For 280–425g cans, the time increases to 24 minutes, and for 800g cans, it takes 26 minutes. After sterilization, the cans are rapidly cooled to complete the process, resulting in a safe and high-quality canned asparagus product ready for packaging and distribution.
