Caramel 101

Over the years, we’ve become true experts in working with Peter’s Caramel. There’s so much you can do with it, and we’ve gathered some of our best tips and tricks to make your caramel experience truly enjoyable. Here’s everything you need to know about melting, using, and storing this amazing product! --- ### **Melting Caramel** Getting your caramel to the perfect consistency is key. The ideal melting point is between 150°F and 170°F, making it perfect for pouring or dipping. Once it exceeds this range, the caramel starts to harden and crack as it cools. #### Methods to Melt Caramel: - **Oven Method** (Our Favorite): Preheat your oven to its lowest setting (around 200°F). Place the caramel in a French Oven—yes, we love Staub! It usually takes about 90 to 120 minutes to fully melt. For a visual guide, check out this [quick video](#). - **Stovetop**: Heat the caramel slowly over low heat, ensuring it stays within the recommended temperature range. Constant supervision is essential to prevent burning. - **Microwave**: Place the caramel in a microwave-safe dish and heat on high for 1 minute. Stir well to distribute heat evenly. Continue microwaving at 50% power in 30-second intervals until melted. Always watch carefully and stir frequently to avoid scorching. - **Crockpot**: Set your crockpot to "warm," which is approximately 165°F. While this works for melting caramel, it’s important to move quickly since prolonged exposure can cause burning. Stir continuously, similar to how you’d melt caramel over a double boiler. --- ### **Other Uses for Caramel** Peter’s caramel is incredibly versatile. Not only can it be melted, but it can also be rolled out, cut, and shaped according to your creativity. - **Thickening**: To thicken your caramel, add ½ to 1 ounce of confectioners' sugar per pound of melted caramel until you reach your desired consistency. - **Thinning**: Add a splash of heavy cream to make the caramel thinner. Alternatively, combining one can of sweetened condensed milk and one cube of butter with a 5-pound loaf of caramel will also do the trick. *Note: These additions aren’t necessary for rich, smooth caramel; they simply help thin it out.* - **Chocolate Caramel**: Add 1–2 ounces of melted chocolate liquor to 1 pound of caramel to create a delicious chocolate caramel blend. - **Dyeing Caramel**: A few drops of gel paste Food Coloring can transform your caramel into any shade you desire. Darker colors work best due to the caramel’s natural hue. - **Flavoring Caramel**: Enhance your caramel with a few drops of your favorite extract, such as black licorice, pumpkin, raspberry, or even coconut. Experiment with flavors like these black licorice or apple cider caramels for a unique twist. --- ### **Storage and Shelf Life** Proper storage is crucial for maintaining the quality of Peter’s caramel. Store it in an airtight container in a cool, dry place. Avoid refrigeration or freezing—it can affect the texture. We often store ours in a plastic bag, so it’s easy to peel off when needed. If kept under optimal conditions, Peter’s caramel loaf can last slightly over a year. --- ### **Usage Tips** One loaf of Peter’s caramel can go a long way: - Approximately 25 medium-sized apples can be covered. - Around 40–60 pretzel rods (half-dipped) can be made. For easy wrapping, Gygi 5×5 caramel wrappers are a lifesaver. They make gifting and sharing a breeze. --- ### **Caramel Recipes** Here are some of our favorite recipes to try: - **Caramel Apples**: Perfect for fall gatherings, these classic treats are simple yet irresistible. - **Caramel Turtle Pops**: Rich, gooey caramel with a hint of pecans—pure indulgence. - **Caramel Brownies**: Add a layer of caramel to your brownie batter for a decadent dessert. - **Salted Caramel Popcorn**: Crispy, buttery popcorn coated in creamy caramel and a sprinkle of sea salt—it’s a crowd-pleaser.
