Last week, I mentioned the reissue of "The Cake Bible" in my roundup, and I wanted to share more about what makes this edition so unique.
The original version, published back in 1988, featured 320 recipes spanning 592 pages. In contrast, this new edition boasts 684 pages with 386 recipes. It's a comprehensive update that includes brand-new photography and reflects the 35 years of adjustments and refinements made by Rose based on both her own experiments and feedback from readers. As always, the book provides precise measurements in both weight and volume, along with detailed instructions for every recipe. It also offers countless conversion charts, tips for success, and variations for many of her tried-and-true recipes.
Rose hasn't forgotten the history of the book either. This edition features the original foreword by Maida Heatter and a fresh one penned by Ron Ben-Israel. The chapters are divided into sections such as Cakes, Showcase Cakes, Wedding and Special Occasion Cakes, Frostings and Other Adornments, Special Effects and Decorative Techniques, and concludes with a section on Ingredients and Equipment. The book wraps up with notes on high-altitude baking and a list of recipes categorized by the number of eggs used.
