Effect of Cinnamaldehyde Preservative on Storage Quality of Penaeus vannamei
In order to prolong the shelf life of Penaeus vannamei, a comparative experiment was conducted between the inhibitory activity of 8 natural compounds and the polyphenol oxidase (PPO) inhibitory activity of P. vannamei. It was found that cinnamaldehyde had both antibacterial and polyphenol oxidase inhibitory activities. Double effect. (Download the attachment)
